How would you respond to someone who says that Jesus Christ was a wonderful teacher but nothing more?

I would say, my dear friend, how wrong you are. You see partial truths are still lies. Christ is so much more than a wonderful teacher. He is the Son of God, the second person in the Holy Trinity. He is the creator of the world that even the winds and the waves obey Him. Yet most importantly, He is the Savior of the World. He came to save all sinners of whom I am the greatest. That my friend is Truth and the greatest Love we can have.

I would introduce this person to the claims that Jesus made about His deity and present the gospel.

Jesus Christ can only have been a wonderful teacher if everything He said about Himself, including the claim of divinity, is true. Wonderful teachers do not mislead others with intentional lies, and they are not confused about the essential truths. Christ say He is the only way to salvation and that He was One with the Father. If these things are not true, then He cannot be even a mediocre teacher.

Jesus was much more than a wonderful teacher. He was a leader, the son of God, and God in the flesh. If he was a wonderful teacher then that means his lessons have value and merit. If that is the case you can only conclude that he was a leader, the son of God, and God in the flesh.

I would agree, and note he was more than just a wonderful teacher. I would note Jesus said he was the Son of God and ask them if wonderful teachers lie about themselves. The idea of Jesus being a liar seems to keep him from being a wonderful teacher. I especially appreciate the idea of Jesus being either a liar, a lunatic, or Lord without room to be any other version.
