Why can Jesus not simply be a guru or yogi, as Eastern religions define these words?

First of all, neither Jesus nor those who wrote the gospels or the apostles who preached about him made those claims.

Who is this Jesus? In Matthew 16:13-18 the disciples quote various opinions they heard from others in their travels. Some thought he was John the Baptist or Elijah or one of the prophets of old reincarnated or that He was just another prophet. Today, they say the same thing, or they include Him in the long list of “good men” such as Martin Luther King, Ghandhi, or some mystic. But Jesus was more than that. He is God. He is Lord. He is the Messiah. He is the source of our salvation. He is worthy of our worship. He is Wisdom, the Wisdom that created the World and mankind. (1 Corinthians 1:30)

His belief system of monotheism doesn’t align with the belief systems of Eastern religions, and he claimed to be the Son of God, not just a teacher.

As he discusses in the lecture, the scriptures say that God is all knowing and omniscient. This can never be true of the other ‘god’s’ .

Many Eastern religions teach that God is everything and can be found within ourselves. Jesus, however, was monotheistic. He believed God was distinct from the world. He believed we are separated from God by our sin. He emphasized and demonstrated our need for prayer. And, He placed emphasis on history specifically with God’s working with the Jews and how Jesus fulfilled prophecy.
